Lark Dark — Review
Bill Lark's darkest expression yet pushes the boundaries of what Australian single malt can be. We spent a week with a bottle to find out if the hype is warranted.
First Impressions
Lark Dark arrives in the distillery's familiar squat bottle, but the liquid inside is anything but familiar. Deep mahogany with copper highlights, it clings to the glass with the confidence of something that spent a long time in a very good barrel.
This is a limited release, finished in heavily charred new American oak after the distillery's signature Tasmanian port cask maturation. The result is a whisky that sits somewhere between the old world and the new — recognisably Lark, but with a boldness that feels like a deliberate statement.
Nose
Rich and brooding. Dark chocolate and espresso arrive first, followed by dried figs, Medjool dates, and a whisper of pipe tobacco. There's the characteristic Lark sweetness underneath — Tasmanian honey, heather — but it's tempered by something smokier and more austere. Given ten minutes in the glass, vanilla and clove emerge.
Palate
Full-bodied and unapologetically bold. The charred oak influence is immediate but never harsh; it frames rather than dominates. Dark berry jam, bitter orange peel, and molasses weave through the mid-palate, giving way to a warming spice — white pepper, cinnamon — that builds slowly.
The port cask heritage shows in the fruit-forward sweetness that lingers beneath everything. There's a complexity here that rewards patience; this is not a dram to rush.
Finish
Long and warming. The oak fades gracefully, leaving behind dark chocolate, dried fruit, and a faint marine note that is a Tasmanian signature. The finish doesn't overstay its welcome but doesn't leave in a hurry either.
Verdict
Lark Dark is a confident, sophisticated expression that demonstrates just how far Australian whisky has come. It won't be for everyone — the char influence is real — but for those who want to see the outer edges of what Tasmania can produce, this is essential drinking.
